"Pinata" cookies for Cinco de Mayo:

But let's face it...those look WAY too hard for me. :) So I simplified it. I made squares in the colors of the Mexican flag, and the white section had a pocket cut out of the middle for the sprinkles. Much easier than all of that stuff that the link talks about.
