Renee's Chia Seed Pudding:

1 c. coconut milk
Approx 2T. cocoa powder
1/4 c. whole chia seeds
Dash of vanilla
1 tsp. honey

Mix everything together, leave in fridge for a couple hours. It can work with any kind of milk, but I find that it sets better in coconut milk (at least better than soy milk).

  1. Are we talking coconut milk in a quart or coconut milk aka can of coconut milk?

    1. The milk in the quart...the seeds need lots of liquid to absorb, as I'm SURE you well know. The can milk is too thick. ;) However, I do like using the vanilla coconut milk for this. It needs that extra sweetness, I think...
