Pioneer Woman Sausage Kale Strata

Sausage-Kale Strata

Ingredients

  • 12 whole Eggs
  • 2-½ cups Half And Half (or Milk, If You Prefer)
  • Salt And Pepper, to taste
  • 4 Tablespoons Minced Fresh Oregano (or Parsley, Basil, Etc.)
  • 1 loaf Crusty French Or Italian Bread, Cut Into Cubes
  • 2 pounds Breakfast Sausage Patties, Cooked And Cut Into Cubes
  • 1 bunch (large) Regular Kale, Torn Into Pieces
  • Olive Oil, For Frying
  • 16 ounces, weight White Mushrooms, Halved
  • 2-½ cups Grated Monterey Jack Cheese

Preparation Instructions

*Note: Recipe can easily be halved.
Mix together eggs, half-and-half, salt, pepper, and minced oregano. Set aside.
Drizzle olive oil over mushrooms and sprinkle with salt and pepper, then roast in a 425 degree oven for 15 to 20 minutes, or until golden brown. Remove from oven and set aside.
Heat olive oil over medium-high heat, then throw in kale. Cook for 2 minutes, or until slightly wilted. Remove from heat and set aside.
Layer half the bread, half the kale, half the mushrooms, and half the cheese in a large, buttered lasagna pan. Repeat with the other half of all the ingredients, ending with the cheese. Slowly pour egg mixture all over the top.
Cover with plastic wrap and refrigerate overnight if possible.
To bake, remove from fridge 20-30 minutes before baking. Replace plastic wrap with foil and bake in a 350 degree oven for 30 to 40 minutes. Remove foil and continue baking until top is golden brown and slightly crisp.

3 more baked oatmeal recipes:

Random Chocolate recipe:  :)
3 cups certified GF oats
1/4 cup honey
3/4 cup chocolate almond milk
2T liquid coconut oil
2t baking powder
3/4t salt
2t vanilla
1/2 cup almond butter
1/4 cup mini chocolate chips

Mix liquid ingredients together and stir well.  Add in oats.  Spread in greased 9X13 pan.  Bakes at 350 for 25-30 minutes.  It's a little sticky, but quite delicious.  Serve with warm milk over top if desired.

Peanut Butter Baked Oatmeal:
3 cups quick cooking oats   (I never use quick cooking oats.  Always rolled.  Just add more moisture and more cooking time.  I like them better)
1/2 cup brown sugar
1 cup milk
2 tablespoons butter, melted
2 eggs
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons vanilla
1/2 cup peanut butter

mix all ingredients together and stir well.  Spread in a greased 9X13 pan.  Baked at 350 for 20-25 minutes.  If you like it a little crunchy on top cook for a few minutes longer.  Serve with warm milk poured over top, or put jelly on it for a PJ and J feel!  :)

Baked Banana Oatmeal:
3 cups quick cooking oats  (I never use quick cooking oats.  Always rolled.  Just add more moisture and more cooking time.  I like them better)
1/2 cup brown sugar
1 cup milk
2 tablespoons butter, melted
2 eggs
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons vanilla
3/4 cup mashed bananas, or about 3 bananas (I always do 4.  Why not??)
1/2 cup chocolate chips

Mix all ingredients together and stir well.  Spread on a greased 9X13 pan (I usually do an 8X8 pan and cook it longer.  I like to cut my oatmeal up into large,thick bars for re-heating later in the week and that size suits me better).  Bake at 350 for 20-25 minutes (or closer to an hour my way).

Fruit baked oatmeal...breakfast of champions!



I had this years ago, when I went to visit my friend Angie up in Bemidji, and I knew it would fast become part of my everyday life.  It totally did.  In fact, when I make a batch I often eat it for the next seven days straight!  It keeps so well in the fridge, and I love being able to pop it in the microwave and have a fruit and baked oatmeal breakfast in seconds flat.



Recipe:
1/2 C oil (I use coconut oil, which gives it a strong coconut flavor unless you use refined coconut oil, or canola oil)
3 C gluten free old fashioned oatmeal
2 eggs
1 tsp vanilla
1/2 C sugar
1 banana
1 C coconut milk
1/2 tsp salt
1+ C chopped fruit (mixed berries are awesome)
1/2 C chocolate chips, if you're feeling naughty...

Directions:
1.  Preheat oven to 350.
2. Mix everything together.
3.  Pour in a 7X8 square baking pan.
4.  Bake for 1 hour.
5.  Enjoy!
6.  (You can cut up the pan into 8 long squares, eat one, and save the rest in the fridge.  It keeps beautifully!)
